Made with only whole food ingredients, this dairy-free version gets its rich and creamy flavour from sweet potatoes and cashews.


This vegan mac and cheese are also supercharged with our plant-based protein mix, Plant Protein, making it the perfect post-workout meal.

The Recipe: Vegan Mac and Cheese with Plant Protein

Serves 3

Ingredients:


  • 2 tbsp Plant Protein mix
  • 3 servings pasta
  • 1 cooked sweet potato, peeled & diced
  • 150g cashews
  • 175ml water
  • 2 tbsp nutritional yeast
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp paprika
  • salt and pepper, to taste


Directions:


  1. Preheat the oven to 180°C and set aside a large oven-safe baking dish.
  2. Cook the pasta according to package directions.
  3. Transfer the cooked sweet potatoes to a high-speed blender, add the remaining ingredients and blend until smooth.
  4. Taste and adjust seasonings.
  5. Add the cooked pasta and creamy “cheese sauce” to the baking dish and stir until evenly coated.
  6. Bake for 30 minutes.
  7. Spoon into bowls and serve.
